Ingredients

  • ½ cup butter
  • 1 ⅓ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup bananas mashed- about 2-3 ripe bananas
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 cups flour
  • ½ cup buttermilk
  • crushed walnuts for topping
  • 1 banana sliced, for topping

Instructions

  • Prep: Preheat the oven to 350°F. Grease two 6-8" cast iron pans or one larger 10-12" cast iron pan.
  • Batter: Start by creaming the butter and sugar together in a large mixing bowl. Add in your eggs, vanilla, and mashed bananas. Mix until well combined.
  • In a separate small bowl, whisk together the dry ingredients including the baking powder, baking soda, salt, and flour. Proceed to stir the dry ingredients into banana mixture.
  • Add in buttermilk and mix until well combined.
  • Bake: Transfer batter to cast iron skillet(s). Top with walnuts and banana slices, if desired.
  • Place in the oven at 350°F and bake for 30 to 40 minutes, until baked through, or a toothpick comes out clean. Serve warm and enjoy!

Notes

Store leftovers in an airtight container on the countertop, will last up to 5 days.  
Bread can be frozen in an airtight container for up to 2-3 months.
