- ½ cup butter
- 1 ⅓ cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup bananas mashed- about 2-3 ripe bananas
- 1 tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 2 cups flour
- ½ cup buttermilk
- crushed walnuts for topping
- 1 banana sliced, for topping
Prep: Preheat the oven to 350°F. Grease two 6-8" cast iron pans or one larger 10-12" cast iron pan.
Batter: Start by creaming the butter and sugar together in a large mixing bowl. Add in your eggs, vanilla, and mashed bananas. Mix until well combined.
In a separate small bowl, whisk together the dry ingredients including the baking powder, baking soda, salt, and flour. Proceed to stir the dry ingredients into banana mixture.
Add in buttermilk and mix until well combined.
Bake: Transfer batter to cast iron skillet(s). Top with walnuts and banana slices, if desired.
Place in the oven at 350°F and bake for 30 to 40 minutes, until baked through, or a toothpick comes out clean. Serve warm and enjoy!
Store leftovers in an airtight container on the countertop, will last up to 5 days.
