BLUEBERRY LEMON BARS

Blueberry Lemon Bars add a fun twist to the classic lemon bar recipe. The crust is made with graham cracker crumbs, which is topped with a creamy lemon layer filled with fresh blueberries.

Ingredients

GRAHAM CRACKER CRUST

  • 1 ½ cups graham cracker crumbs
  • cup melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon zest

LEMON BLUEBERRY FILLING

  • 14 oz sweetened condensed milk
  • 2 egg yolks
  • cup lemon juice
  • 1 teaspoon lemon zest
  • 1 cup fresh blueberries

Instructions

  • Preheat oven to 350°F.  Spray an 8-inch square baking pan with non-stick cooking spray or line with parchment paper and set aside.
  • Add the graham cracker crumbs, melted butter, granulated sugar and lemon zest to a large mixing bowl.  Mix until well combined.  Press the mixture into the base of the prepared baking tin.  Bake for 10 minutes, then set aside to cool.
  • Once the base has cooled, make the filling by adding the sweetened condensed milk, egg yolks, lemon juice and lemon zest to a large mixing bowl.  Mix until smooth and well combined.  Use a spatula or large spoon to fold in the blueberries.
  • Pour the filling mixture over the cooled base.  Bake for a further 15 minutes, or until the filling has set.
  • Allow to cool completely in the pan, before placing in the fridge to cool for at least 30 more minutes.
  • Remove the lemon bars from the baking pan, then slice and serve.
