GRAHAM CRACKER CRUST
- 1 ½ cups graham cracker crumbs
- ⅓ cup melted butter
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
LEMON BLUEBERRY FILLING
- 14 oz sweetened condensed milk
- 2 egg yolks
- ⅓ cup lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh blueberries
Preheat oven to 350°F. Spray an 8-inch square baking pan with non-stick cooking spray or line with parchment paper and set aside.
Add the graham cracker crumbs, melted butter, granulated sugar and lemon zest to a large mixing bowl. Mix until well combined. Press the mixture into the base of the prepared baking tin. Bake for 10 minutes, then set aside to cool.
Once the base has cooled, make the filling by adding the sweetened condensed milk, egg yolks, lemon juice and lemon zest to a large mixing bowl. Mix until smooth and well combined. Use a spatula or large spoon to fold in the blueberries.
Pour the filling mixture over the cooled base. Bake for a further 15 minutes, or until the filling has set.
Allow to cool completely in the pan, before placing in the fridge to cool for at least 30 more minutes.
Remove the lemon bars from the baking pan, then slice and serve.
