Ingredients

  • 30 oz Apple pie filling
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 14 oz cinnamon graham crackers
  • 6.8 oz vanilla pudding two 3.4 oz boxes
  • 2 cups milk
  • ½ cup powdered sugar
  • 2 cups heavy whipping cream
  • 1 tsp vanilla extract
  • 10 oz caramel topping I used Smuckers

Instructions

  • Prep: Place the apple pie filling into a bowl, then use scissors to cut the pieces of apple into smaller chunks. Next, add the cinnamon and nutmeg to the apple pie filling and set aside.
  • Cake filling: In a separate bowl whisk together the vanilla pudding, milk, and powdered sugar. Then add the heavy whipping cream and vanilla extract. Use an electric hand mixer to whisk together (about 3-4 minutes), until fully combined.  
  • Assembly: Now, in a 9x13 pan, place one layer of cinnamon graham crackers at the bottom. Proceed to spoon half of the apple pie filling over the graham crackers. After that, spread half of the vanilla pudding mixture over the apple pie filling. 
  • Then repeat a layer of graham crackers, then apple pie filling, another layer of vanilla pudding, and top with a layer of graham crackers. 
  • Lastly, heat the hot caramel topping up in the microwave so you can pour it over the top. Continue to carefully pour the caramel topping on top and smooth it out. 
  • Chill: Place the cake into the fridge to chill for at least 4-6 hours, overnight is best. When you are ready to serve, slice and enjoy!

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. 
Dessert can be frozen, but it does change the texture of the layers, so it's not recommended.
