Maple Pecan Apple Crisp Recipe

- 4 apples peeled & sliced
- 1/4 cup apple juice
- 2 TBSP brown sugar
- 1 TBSP cornstarch
- 1 tsp cinnamon
- 2 tsp maple extract
Topping:
- 1/2 cup flour all purpose or whole wheat
- 2 TBSP brown sugar
- 1/2 cup cold butter cubed
- 1/4 tsp salt
- 3/4 cup old fashioned oats
- 1/2 cup chopped pecans
- 1/2 cup real maple syrup
- vanilla ice cream
Preheat oven to 375 degrees F. Spray a baking dish with non-stick spray.
Wash, peel and slice apples into wedges. I used my apple slicer to cut them into 10 wedges, then I cut each of those in half. Add apples to baking dish.
Combine 2 TBSP brown sugar, cornstarch and cinnamon. Pour in apple juice and maple extract. Stir, then pour over apples and toss gently to coat.
To make the topping, combine flour, 2 TBSP brown sugar, butter and salt. Mix until butter resembles the size of peas. Stir in oats and pecans. Sprinkle mixture over apples.
Bake for 40 minutes. Remove from oven and cover with foil, then bake an additional 10 minutes.
Remove foil. Drizzle apple crisp with 2-3 TBSP maple syrup. Serve topped with vanilla ice cream and additional maple syrup.
