FRENCH ONION BEEF RICE CASSEROLE

Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 medium yellow onion diced
  • 2 garlic cloves minced
  • 2 cups instant white rice
  • 2 ½ cups beef broth divided
  • 10.5 oz can condensed cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 envelope dry Lipton French Onion Soup Mix
  • ½ cup french fried onions

Instructions

  • Preheat oven to 350°F. Grease a 9x13-inch baking dish with non-stick cooking spray, and set aside.
  • Bring 2 cups of beef broth to a boil in a medium saucepan. Turn off the heat and stir in the instant rice. Cover and let sit for 5 minutes.
  • While the instant rice sits, heat olive oil in a large skillet over medium heat. Add the ground beef and onions and cook, breaking the beef up with a spoon, until browned. Drain any excess fat.
  • Add the minced garlic and cook for 1 minute. Remove from heat.
  • Stir in the cream of mushroom soup, sour cream, shredded cheese, French onion soup mix, remaining beef broth, and rice. Pour the mixture into the prepared baking dish. Cover tightly with foil.
  • Bake for 15 minutes. Remove the foil, sprinkle the french fried onions on top, and bake for an additional 10-15 minutes, or until the casserole is cooked through and the liquid is absorbed.
  • Let cool slightly before serving.
