Banana Pudding Brownies
Banana Pudding Brownies are a delightful combination of vanilla cake mix with banana pudding mix, brown sugar, eggs & a whole banana. These blonde brownies are baked with a sweetened cream cheese topping which compliments the banana flavor perfectly!

Brownies:
- 15.25 oz vanilla cake mix
- ⅓ cup banana pudding mix
- ¼ cup brown sugar
- 1 ½ TBSP cornstarch
- 1 ¼ tsp cinnamon
- ¼ cup mashed banana
- ¼ cup vegetable oil
- 2 eggs + 2 yolks
Topping
- 8 oz cream cheese
- ½ cup sugar
- 2 TBSP milk
- 1 ¼ tsp vanilla extract
- ⅛ tsp salt
Prep: Preheat the oven to 350°F. Line a 9x9 square pan with parchment paper and set aside. In a small bowl mash the banana and measure out the ¼ needed. Set it aside.
Batter: In a large bowl, combine the cake mix, pudding mix, sugar, cornstarch and cinnamon. Whisk to combine.
Add the mashed banana, vegetable oil, and egg yolks and mix just until combined. Pour into the parchment lined pan and spread to the edges.
In a separate bowl, add all of the topping ingredients and use a hand mixer to beat the ingredients together until smooth and creamy. Spoon onto the brownie batter and spread evenly.
Bake: Place the pan into the preheated oven to bake for 55 minutes or until baked through. The topping will still be very jiggly. Once baked, remove from the oven and let cool completely before cutting into squares. Serve and enjoy!
Brownies may be stored in the fridge for up to 3 days.
For longer storage, they can be frozen for up to 3 months. To thaw frozen brownies, leave them in the refrigerator overnight or at room temperature for a few hours before serving.
