- 8 ounces frozen chopped spinach* defrosted, squeezed, and drained
- 1 ½ cups mozzarella cheese divided
- 8 ounce cream cheese softened to room temperature
- 1 cup sour cream
- 1 cup salsa verde
- 1 cup grated parmesan cheese divided
- 2 garlic cloves minced
- 1 tablespoon parsley finely chopped
- 1 teaspoon dried dill
- 1 teaspoon onion powder
- ¼ teaspoon coarse kosher salt
- ¼ teaspoon black pepper
- 2 tablespoons chives
Preheat the oven to 400° F.
MAKE THE DIP: To a large bowl add the spinach, 1 cup mozzarella cheese, cream cheese, sour cream, salsa verde, ½ cup parmesan cheese, garlic cloves, parsley, dried dill, onion powder, salt, and pepper. Mix until fully combined.
Transfer the dip to an ungreased 7x10 baking dish.
Top the dip with ½ cup of mozzarella cheese and ½ cup of parmesan cheese.
BAKE THE DIP: Bake for 20 minutes or until the cheese is melted and bubbly.
Turn the oven to broil and cook for an additional 5 minutes until the top is golden brown. If your oven has a temperature for broil turn the oven to 400° F.
Remove from the oven and sprinkle the chives on top.
Serve immediately. This appetizer is perfect for dipping bread, crackers and vegetables, but can also be served with grilled chicken and potatoes.
