Ingredients

  • 14 oz sweetened shredded coconut
  • 2 cups semi-sweet chocolate chips can sub in dairy free chocolate chips
  • ½ cup slivered almonds
  • 11.25 oz sweetened condensed COCONUT milk
  • tsp salt

Instructions

  • Prep: Preheat the oven to 325°F. Line a baking sheet with parchment paper and set aside.
  • Cookie dough: In a large bowl combine the shredded coconut, chocolate chips, almonds, coconut sweetened condensed milk and salt. Stir until combined. The mixture is thick!
  • Spray a medium cookie scoop with nonstick spray and scoop out dough onto prepared baking sheet. Aim for level scoops, not rounded scoops as these cookies are rich. Moisten the tips of your fingers with water and press the cookies more flat, pressing in pieces of coconut where needed.
  • Bake: Bake cookies for 12 to 14 minutes or until tips of coconut are just starting to turn golden brown. Let cool on baking sheet for 5 minutes. You can use a round cookie cutter to circle the cookies to make them more round, if you'd like. Transfer to a cooling rack to cool completely. Serve and enjoy!

Notes

Store cookies in an airtight container on the countertop for up to 5 days. 
Cookies freeze well for up to 3 months.
