Ingredients

  • 3 TBSP canola oil
  • 1 large, boneless, skinless chicken breast
  • 2 cups frozen peas & carrots
  • 2 cups riced cauliflower
  • 3 cloves garlic minced
  • 3 eggs
  • 2 cups cooked short grain rice cooked & chilled
  • 1 cup pineapple tidbits
  • ½ cup cashews
  • 3 TBSP soy sauce
  • 2 tsp. salt
  • 2 tsp. chopped scallions
  • 1 TBSP sesame oil

Instructions

  • Prep: Before you can assemble the fried rice, you will need to cook a couple items first. The chicken needs to be fully cooked and chopped into bite sized chunks. You can accomplish this by baking the chicken with some basic seasonings such as salt, pepper and/or garlic powder.
  • Also, the rice needs to be cooked (follow instructions on packaging) and cooled beforehand as well. Using a rice maker simplifies this process, or cooking on the stovetop works well too.
  • If you are using fresh garlic, mince the 3 cloves now to have them ready for the cooking process. Same with the scallions, chop those into small pieces as well.
  • Cook & Assemble: Heat wok or large skillet over medium-high heat. Once hot, add 2 TBSP oil. Add chicken and stir-fry for 2-3 minutes.
  • Add peas and carrots, stir-fry 2 minutes. Add riced cauliflower and garlic; stir-fry 3 minutes.
  • Push mixture to side of skillet and add remaining 1 TBSP of oil to empty side of skillet. Add eggs and stir-fry until scrambled, stirring frequently.
  • Add rice, pineapple and cashews. Cook until warmed through and well combined.
  • Add soy sauce, stir until combined. Drizzle top of rice with sesame oil. Season with salt, to taste, if desired. Serve rice immediately and enjoy!

Notes

Store cooked fried rice in airtight containers in the refrigerator for 2-3 days. To freeze, transfer to the freezer in plastic storage bags for up to 1 month. To reheat, warm in the microwave for the best results.
