Ingredients

  • 1 Egg
  • 1 cup Milk
  • 1 tbsp Butter melted
  • 1 ¼ cup Flour
  • 1 tbsp Baking powder
  • ½ tsp Salt
  • 1-2 tbsp Brown sugar
  • 5 Sausage patties

Instructions

  • Batter: In a medium size bowl, whisk together the egg and milk. Then, melt the butter in the microwave and add to the egg mixture. Stir to combine.
  • In a separate small bowl, combine all the dry ingredients, flour, baking powder, salt and brown sugar. Then transfer the dry ingredients to the bowl of wet ingredients, whisk until combined and most of the lumps are gone. Set the batter aside for about 10 minutes. Letting your pancake batter sit before cooking yields more fluffy pancakes! If you are in a rush, you can skip this part too of course.
  • Cook: While the batter is sitting, get your griddle preheating to 325 degrees F. If you are using a pan on the stove, use medium heat. Then, spray the griddle or pan lightly with cooking spray and set the sausage patties on it and let them warm up for about 2 minutes on each side. Pull the sausage off the griddle and place on a plate within easy reach.
  • Next, ladle about ¼ cup of batter onto the griddle 5 times, spacing them out as best as you can. Let the batter cook for about 1 minute, then set a sausage patty in the center. Ladle a bit less than ¼ cup of batter on top of the sausage, using a spoon to cover it. Let cook for another 2-3 minutes, until the edges look dry and bubbly. Flip and cook an additional 2-3 minutes.
  • Remove from griddle, lather with butter and syrup, serve immediately and enjoy!
