Ingredients

  • 2 13-ounce cans of Thai Kitchen unsweetened coconut milk
  • ½ cup Dairy free milk any other type/brand of dairy-free milk
  • ½ cup Sugar
  • 1 cup Raspberry jam divided in half

Instructions

Prepare mixture

  • In a large bowl, combine both types of milk, the sugar and just a 1/2 cup of the jam. Whisk to dissolve the sugar.
  • Procced to pour the mixture into the ice cream maker. Follow the directions on your ice cream maker to begin mixing, mine just requires the push of a button.

Churn ice cream

  • Then, let the ice cream maker agitate for about 15-20 minutes.
  • After that, pour the contents into a freezer-safe container and take the remaining 1/2 cup of jam and drizzle along the top of the ice cream. Using a knife, swirl the jam in and around to create a marbled effect.

Freeze

  • Put the mixture into the freezer and freeze until solid, about 4-5 hours.
  • If desired, top with a little more jam or fresh fruit even.
  • Serve cold and enjoy!
