Ingredients

  • 15.25 oz box of yellow cake mix divided
  • cup butter melted
  • 4 eggs divided (crust & topping)

Topping

  • ½ cup maple syrup
  • cup packed brown sugar
  • ½ tsp maple extract or vanilla
  • 1 cup chopped pecans or walnuts

Icing

  • 1 cup powdered sugar
  • 1 TBSP milk (plus more if needed)
  • 1 TBSP butter melted

Instructions

  • Prep: Preheat the oven to 350 degrees F. Spray a 9x13 pan with cooking spray.
  • In a small mixing bowl, measure out ⅔ cup of the dry cake mix and reserve this for later use.
  • Crust: Pour the remaining cake mix into another small mixing bowl and add 1 of the eggs and the melted butter. Mix well with a rubber spatula and press into the prepared pan. Bake for 10-12 minutes, until golden brown.
  • Topping: Grab the bowl with the reserved dry cake mix and add in the remaining 3 eggs. Whisk in the brown sugar, maple syrup and either the maple or vanilla extract.
  • Once the crust has baked for 10-12 minutes, pour the topping over it, sprinkle on the chopped nuts and return to the oven for an additional 15-18 minutes. Remove from oven and let cool before adding the icing.
  • Add Icing (optional): Whisk to combine the powder sugar, melted butter, and milk, until smooth and to the desired consistency.
  • Continue to transfer the icing to a small bag, snip the corner off and ice the pecan bars however you'd like. Slice, serve and enjoy!

Notes

Maple pecan bars can be stored in an airtight container at room temperature for up to 3 days. For longer storage, they can be stored in the refrigerator for up to 1 week.
To freeze, wrap the bars tightly in plastic wrap and store in an airtight container in the freezer for up to 3 months. Thaw at room temperature when ready to enjoy.
