Ingredients

  • 26 oz (2) 13-oz cans Thai Kitchen unsweetened coconut milk
  • ½ cup dairy-free milk I used Silk Vanilla Soy
  • 1 cup sugar
  • 1 ½ tsp mint extract
  • 2 oz vegan chocolate bar grated

Instructions

  • Prep: Combine the coconut milk, dairy-free milk, sugar, and mint extract in a bowl. Whisk until the sugar has fully dissolved.
  • Grate the chocolate squares to have that ready for when you need it.
  • Churn: Pour the liquid into your ice cream maker and then follow the instructions on the machine to begin mixing- mine requires just the push of a button.
  • When the mixture has thickened slightly, add the grated chocolate, a little at a time.
  • Freeze: After about 30 minutes, transfer the mixture to a freezer-safe container and freeze until solid, this could take about 4-5 hours. Once frozen, scoop, serve, and enjoy!

Notes

Store the ice cream in an airtight container with a lid in the freezer and it will last up to 2 weeks. 
Place the container on a flat surface and avoid tilting or shaking the container as it could cause the ice cream to melt and refreeze, resulting in ice crystals.
