Ingredients

  • 1 cup all-purpose flour
  • 3 TBSP cocoa powder
  • 2 TBSP brown sugar
  • 2 TBSP baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 2 TBSP honey
  • 1 egg
  • 1 cup milk
  • 2 TBSP vegetable oil
  • ¼ cup mini chocolate chips {optional}

Instructions

  • Batter: In a large mixing bowl, whisk together the dry ingredients. Make a well in the center. Add the wet ingredients into the well and whisk to combine. Stir in the chocolate chips.
  • Cook: Heat the pan to medium temperature for about 3-5 minutes, allowing the pan to heat evenly over the entire surface. Lightly spray the griddle with non-stick cooking spray. You can also use butter and spread it over the pan as well.
  • Next, pour or spoon about a 1/4 cup of the pancake batter onto the griddle to form your pancakes. Flip them over after about 2-3 minutes, when the bubbles form in the center, and the edges look dry. Then cook the other side an additional 2 minutes.
  • Serve: These are best served with butter and syrup for a delicious treat. You can also make them extra special with whip cream and a fresh berries on top! Serve immediately and enjoy!

Notes

If you have left over pancakes they should be stored in an airtight container in the refrigerator and will last up to the 3 days. To reheat, simply microwave them for 30 seconds or until warm.
