Ingredients

  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 cup sugar
  • ¼ cup cornstarch
  • 1 teaspoon vanilla extract
  • 5 cups peaches fresh or frozen, sliced

Instructions

  • In a large pot over medium high heat add in the water, lemon juice, sugar and cornstarch.
  • Whisk constantly until mixture becomes thick and comes to a bubble.
  • Remove from heat and add the vanilla and your peaches.
  • Stir everything gently to combine.
  • Use in pies, cakes, cobblers or even just on top of vanilla ice cream.

Notes

Recipe yields 4 cups of peach pie filling.
