Copycat Starbucks Gingerbread Loaf with Cream Cheese Frosting

Ingredients

Loaf:

  • 1 ¾ cups flour
  • 2 ½ tsp ginger
  • 1 ½ tsp cinnamon
  • ¾ tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp allspice
  • ¼ tsp cloves
  • 1 tsp salt
  • ½ cup butter room temp
  • ½ cup brown sugar
  • ¼ cup sugar
  • cup applesauce
  • cup molasses
  • 2 eggs
  • 1 tsp vanilla

Frosting:

  • 8 oz cream cheese
  • 4 Tbs butter room temp
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • Pinch of salt

Instructions

  • Preheat the oven to 350 F. Line a loaf pan with parchment paper and spray with baking spray. Set aside.
  • In a medium-sized bowl, whisk together the flour, salt, baking soda, baking powder, and all of the spices.
  • In a separate bowl, whisk together the butter, brown sugar and sugar until smooth.
  • Add in the eggs and beat together.
  • Add in the applesauce, molasses and eggs and whisk until smooth.
  • Add the flour mixture into the wet mixture and mix just until the flour is incorporated.
  • Pour the batter into the loaf pan and place into the preheated oven to bake for 45 minutes or until a toothpick inserted comes out clean or with moist crumbs.
  • Once the loaf is baked, remove from the oven and place onto a cooling rack to cool completely.
  • While the loaf is cooling, make the cream cheese frosting.
  • In the bowl of a stand mixer fitted with a paddle attachment, combine all of the ingredients and beat on medium-high speed for 6-8 minutes or until a smooth and creamy frosting has formed.
  • Once the bread has cooled, remove from the loaf pan.
  • Dollop and smooth the cream cheese frosting on top of the entire loaf. Slice and serve.

Notes

Storage: Bread may be stored in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
