Ingredients

  • 7 eggs
  • 1 cup milk
  • 2 tsp sugar
  • 16 oz cottage cheese
  • 4 oz cream cheese cubed and softened
  • 1 lb Monterey Jack cheese shredded
  • 2/3 cup butter melted
  • 1/2 cup flour
  • 1 tsp baking powder

Instructions

  • Preheat oven to 350°.
  • In a large bowl, beat together eggs, milk and sugar. Add cheeses and melted butter and mix well. Mix in flour and baking powder and then pour into a 9X13 pan (or other 3 quart casserole dish) that has been greased with non-stick cooking spray.
  • Bake for 45-50 minutes or until toothpick inserted in the center comes out clean. Slice and serve.
