Chocolate Peanut Butter Candy

Ingredients

  • 1 cup Creamy Peanut butter
  • 5 TBSP Butter
  • 2 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 2 cups Dark Chocolate
  • 1 Tbsp Oil

Instructions

  • In a large bowl, combine the peanut butter and butter. Microwave for 1 minute. Whisk the butter and peanut butter together till it becomes creamy and smooth.
  • Now, add in the vanilla extract and mix well.
  • Next, add the powdered sugar in batches and stir everything together. It should take the form of soft dough.
  • Line a large baking sheet with parchment paper.
  • Scoop out a portion of the dough onto your palm and shape it into a small disc. Place each disc on the prepared baking sheet.
  • Once all the dough is shaped, refrigerate the peanut butter discs for 30 minutes.
  • Melt the dark chocolate in a microwave for 1 minute 30 seconds. Let it sit a few minutes, then add the oil and gently try and stir it. Return chocolate to the microwave in 20-second intervals until it is completely melted. Let it sit in the microwave for 2 minutes between each interval, removing the bowl and gently stirring it. Chocolate scorches easily; go slow and be patient while melting it.
  • Take the discs out of the fridge. Dip the discs into the chocolate using a fork to form an even coating, tapping gently to remove excess chocolate. Place them back on the parchment paper. At this stage, before the chocolate sets, you can decorate as you like. You can top them with some sugar sprinkles or pipe some chocolate over them.
  • Let cool to set about 25-30 minutes. Serve and enjoy.
