Ingredients

  • 22 Chewy Chocolate Chip Cookies
  • 6 Chocolate Chip Cookie Ice Cream Sandwiches
  • 1 ½ Quarts Cookie Dough Ice Cream
  • 1 Cup Whipped Cream
  • 3 TBSP Chocolate Syrup

Instructions

  • Set out your cookie dough ice cream to soften so it’s easier to scoop when the time comes.
  • Line the bottom of a 9-inch springform pan with parchment paper. I left an overhang, which made it easier to remove the cake once finished. Attach the top of the pan and lock in place.
  • Unwrap and position the chocolate chip ice cream sandwiches in the bottom of the pan, lining the edge.
  • Place 3-4 chocolate chip cookies in the middle of the sandwiches. Depending on the height of your chocolate chip cookie ice cream sandwiches, it may take more or less cookies for them to sit even with the sandwiches. If you plan to serve the cake soon, within a day or two, I recommend first dipping the cookies in milk. (especially if your cookies are a bit crunchy.)
  • Place your ice cream on top of the sandwiches and cookies and spread even, making sure the cracks are filled with ice cream as well.
  • Make an even layer over the ice cream with chocolate chip cookies. This should take about 14 cookies.
  • Crumble the remaining cookies over the top, filling any cracks showing bare ice cream.
  • Cover and place in the freezer for 2 hours or until solid.
  • Remove and use a frosting bag with a Wilton 2A tip to place dollops on top of the cake.
  • Drizzle with chocolate syrup and enjoy!
