Cheesecake banana bars are soft, flavorful cinnamon banana bars with a vanilla cheesecake swirl! Easy recipe for ripe bananas that's so much better than banana bread!

Ingredients

Banana Bars

  • 5 bananas very ripe, about 1 2/3 cups
  • 3/4 cup brown sugar
  • 1/4 cup oil, any type I use coconut
  • 1/4 cup milk
  • 2 eggs
  • 1 3/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

Cheesecake Swirl

  • 8 oz softened cream cheese
  • 1/3 cup milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla

Instructions

  • Heat oven to 350 degrees F. Spray a 15×10.5" pan with non-stick spray.
  • Peel bananas and mash well. Stir in brown sugar, oil, 1/4 cup milk and eggs until combined. Add in dry ingredients and stir. Spread the batter into the prepared pan.
  • In a separate bowl, mix together the cream cheese, 1/3 cup milk, granulated sugar and vanilla. Use a spoon to drop dollops of the cream cheese mixture onto the banana bar batter- I had about 15 dollops total. Run a thin knife through the dollops multiple times, swirling the cheesecake into the batter.
  • Bake 25 minutes, until a wooden toothpick inserted in center comes out clean. Cool completely and cut into squares. Enjoy!
