Ingredients

  • 1 1/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter softened
  • 3/4 cup granulated sugar
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract
  • zest from 1 lemon
  • 2 tablespoons lemon juice
  • 3/4 cup plain greek yogurt
  • 2 tablespoons poppy seeds

Lemon Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice
  • optional: lemon zest poppy seeds for sprinkling

Instructions

  • Preheat oven to 350°F. Line a muffin pan with cupcake liners.
  • In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  • In a large bowl, beat the butter and sugar. Mix in eggs. Beat in the yogurt, lemon zest, juice, and vanilla.
  • Add dry ingredients to wet ingredients and mix until just combined. Stir in poppy seeds.
  • Fill the muffin tins about 2/3 full with the batter. Bake for 12-15 minutes, until an inserted toothpick comes out clean. Allow to cool on a wire rack.
  • For the icing, whisk the ingredients together until smooth. Using a teaspoon or a piping bag, drizzle the icing over the cooled muffins. Sprinkle with additional zest and poppy seeds.
