  • 2 cups grape tomatoes, sliced
  • 2 cups cucumbers, sliced into quarters
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil, sliced
  • 1/4 cup feta cheese
  • 3 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • salt and pepper to taste


  • In a large salad bowl combine the sliced tomatoes, cucumbers, onions and basil.
  • In a small bowl combine the balsamic vinegar and olive oil. Pour over the vegetables and toss to coat.
  • Season with salt and pepper
  • Sprinkle with feta cheese crumbles. Serve chilled.
