No Yeast Wheat Bread

No Yeast Wheat Bread that is made without yeast, no eggs, no mixer or kneading required! This simple bread recipe is sweet, moist and so delicious, it's hard to believe there isn't any yeast in it.

Ingredients

  • 2 cups whole wheat flour
  • 1 cup all-purpose white flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 2/3 cup light brown sugar
  • 1/4 cup molasses
  • 2 cups buttermilk

Instructions

  • Preheat the oven to 350°.
  • In a large bowl, stir the flours, baking soda, salt and brown sugar together until well combined.
  • Mix in the molasses and buttermilk and stir until everything is moistened. Don't stir the batter too much - you only want to stir just until everything is combined.
  • Pour the batter into a 9X5 bread pan that has been well greased. I like to use the non-stick baking spray that has flour in it with this bread recipe because it is stickier than regular yeast breads.
  • Bake for about 50-60 minutes or until a toothpick comes out of the center cleanly. I like to use a food thermometer to see if the bread is done - the internal temp in the center of the bread should be about 190°F. If the top looks like it is getting too brown, you can put some foil over the top for the last part of baking, and then continue baking until the center is done.
  • Cool in the pan for about 5-10 minutes and then remove from the pan and cool on a wire rack until completely cooled. Or you can do what we do in my house and wait until it's cooled just enough that you don't burn yourself while slicing the bread so that you can eat it hot and fresh from the oven!
