- 1 cup oatmeal (I prefer rolled oats)
- 1 cup buttermilk
- 1 egg
- 1/2 cup brown sugar
- 1/2 cup oil (coconut, vegetable, canola, etc)
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp baking powder
- 1-2 cups semi-sweet chocolate chips
Mix oatmeal, buttermilk, egg, brown sugar and oil together with a spoon until fully combined. Let sit for about 10-15 minutes so the oats can soften.
Add flour, salt, baking soda and baking powder and mix together until well combined but do NOT over mix. Stir in the chocolate chips.
Pour batter into a well-greased bread pan and bake at 325° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 10-15 minutes and then remove from the pan and cool completely on a wire rack.
