Ingredients

  • 1 cup oatmeal (I prefer rolled oats)
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup brown sugar
  • 1/2 cup oil (coconut, vegetable, canola, etc)
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1-2 cups semi-sweet chocolate chips

Instructions

  • Mix oatmeal, buttermilk, egg, brown sugar and oil together with a spoon until fully combined. Let sit for about 10-15 minutes so the oats can soften.
  • Add flour, salt, baking soda and baking powder and mix together until well combined but do NOT over mix. Stir in the chocolate chips.
  • Pour batter into a well-greased bread pan and bake at 325° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for about 10-15 minutes and then remove from the pan and cool completely on a wire rack.
