Thinly slice zucchini. Beat egg in a separate bowl. Combine Panko with seasonings in another bowl.
Dip individual pieces of zucchini in egg, then Panko mixture. Arrange on a pan covered in parchment paper, to prevent sticking.
Bake in a 425 degree oven for 12 minutes. Turn on broiler and bake until tops turn light brown, about 3-4 minutes.
Serve immediately with a side of ranch dressing. Enjoy!
