Ingredients

  • ½ cup coconut oil softened
  • ½ cup brown sugar lightly packed
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup all purpose flour can use 1/2 whole wheat flour
  • ¼ tsp salt
  • 1 cup old fashioned oats not quick oats
  • 1 cup raspberry jam or raspberry preserves
  • ¼ walnuts chopped, optional

Instructions

Prep

  • Heat oven to 350°F. Line 8-inch square pan with parchment paper. Set aside.

Assemble

  • Next, in a large mixing bowl, add the softened coconut oil, egg, brown sugar, salt and vanilla extract. Stir to combine.
  • Then, add in flour and oats. Stir until a thick dough is formed.  
  • If you have chosen to add nuts to the mix, add those in and combine into mixture.
  • Proceed to press ⅔ of this mixture down into the parchment lined pan.  Use your fingers to press and spread down into one even layer.
  • After that, top with the raspberry jam and spread into one even layer across the crust.
  • Then, drop the remaining ⅓ crumbly oat mixture into clumps on top of the raspberry layer.

Bake

  • Put the pan in the oven and bake for 35-40 minutes or until the edges are golden.
  • Remove from oven & allow bars to cool at room temperature before carefully slicing and serving! Enjoy!
