Ingredients

  • 2 8 oz packages Cremini mushrooms, washed and stems removed
  • 6 slices bacon
  • 1 8 oz cream cheese, softened
  • 1 cup cheddar cheese, grated
  • 1 jalapeno, diced
  • 1 tsp garlic powder

Instructions

  • Preheat oven to 375ºF.
  • Dice the stems of the mushrooms. Slice the bacon into bite sized pieces.
  • In a skillet over medium high heat, cook the bacon until crisp. Remove the cooked bacon from the pan to a paper towel lined plate. Drain the grease from the pan.
  • Place the mushroom stems in the pan and cook and stir until tender, about 3-4 minutes. Remove from the pan to a clean bowl.
  • In a large mixing bowl, mix together the cream cheese and cheddar cheese. Add in the bacon pieces, mushrooms, diced jalapeno and garlic powder.
  • Place the mushroom caps top side down on a baking sheet. Fill each cap with some of the bacon jalapeno cheddar mixture.
  • Bake the mushrooms for 10-15 minutes until the cheese is melted and heated through.
