Instant Pot Refried Beans

Instant Pot Refried Beans are easy to make, full of flavor and taste just like the refried beans at your favorite Mexican restaurant! This easy refried bean recipe doesn't require any overnight soaking and only requires a few minutes of preparation.

Ingredients

  • 2 Tbsp olive oil
  • 1 onion diced
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 3-4 Tbsp minced garlic
  • 4 oz can peeled and diced green chiles
  • 1 pound 2 cups pinto beans, rinsed and drained
  • 4 cups chicken broth

Instructions

  • Turn the Instant Pot on, using the Saute function. Wait for it to heat up for a couple of minutes and then add in the olive oil and onions. Cook the onions for about 3-4 minutes or until softened.
  • Add the chili powder, cumin, oregano and garlic to the onion mixture and stir to combine. Cook for another 1-2 minutes.
  • Pour the can of green chiles in and mix together. Add the pinto beans and then pour the chicken broth in.
  • Set the Instant Pot to High Pressure for 60 minutes. Allow a Natural Pressure release for 25 minutes and then Quick Pressure Release at that point if necessary.
  • Strain the liquid from the beans, reserving the strained liquid in a bowl. Place the beans back in the Instant Pot and mash with a potato masher. Add in some of the reserved liquid to get the desired consistency. Add salt to taste if desired. Serve immediately or store in an airtight container in the refrigerator to be heated later.
