Easy Taco Salad Recipe
Easy Taco Salad Recipe loaded with beans, corn, peppers, onions, tomatoes and perfectly seasoned! Simple vegetarian taco salad to whip up for an easy dinner or for a potluck!
- 15 oz corn kernels, drained
- 15 oz black beans, drained
- 15 oz kidney beans, drained
- 2 oz sliced black olives
- 1 red pepper, diced
- 1 cup white onion, diced
- 3 roma tomatoes, diced
- 1 oz taco seasoning packet
Open and drain cans of corn, black beans, kidney beans and olives. Combine in a large bowl.
Dice the pepper, onion and tomatoes and add to the bowl.
Sprinkle the ingredients in the bowl with the taco seasoning packet and stir to combine and season.
Garnish with avocado slices, cilantro, green onion and tortilla strips if desired.
Serve chilled with tortilla chips.
