French Toast Bites
Cut each slice of bread into 16 equal squares. This is done by cutting each slice of bread into 4 vertical sections and then cutting each of those sections into 4 squares. Set aside.
Whisk together the eggs, milk, sugar and vanilla to create the egg wash.
Quickly coat each square piece of bread before placing onto a hot griddle or frying pan that has been sprayed with non-stick spray.
Cook on medium heat until golden brown. Turn over and cook on the opposite side until golden brown.
Remove from the pan and repeat with any remaining squares of bread.
Vanilla Icing
Using either a stand mixer or handheld beaters, mix the butter, powdered sugar, milk and clear vanilla extract together until smooth.
You can add a little extra milk or powdered sugar to achieve desired consistency.
French Toast Fruit Kabob Assembly
Slide 2 squares of French toast onto the wooden kabob at a time with a strawberry in between.
Depending on the size of the strawberries, you may need to cut them in half in order to have enough strawberries to finish all of the kabobs.
To end up having 16 kabobs, 6 squares of French toast and two strawberries would go onto each kabob.
If you want to have 24 kabobs, 4 squares of French toast and two strawberries would go onto each kabob.
Drizzle the kabobs with the vanilla icing right before serving.
