Preheat oven to 435 degrees F. Warm pan in oven if you're using cast iron.
Lay bacon out on a plate lined with a paper towel. Microwave for 6-7 minutes, depending on the thickness of your bacon. Let cool slightly until you can handle it easily.
Remove warm pan from oven. On a separate plate, prepare Smithfield Marinated Slow Smoked Mesquite Pork Loin Filet by removing it from the package and wrapping slices of semi-cooked bacon around it. Once entire Smithfield Marinated Slow Smoked Mesquite Pork Loin Filet is wrapped in bacon, slide meat onto the hot pan. Top with 5-6 slices of pineapple.
Bake in 425 degrees oven for 25-30 minutes. Check meat by inserting a meat thermometer into the thickest portion - temperature should read 150 degrees F when done.
Remove from oven and let rest for 10 minutes to let juices redistribute. Slice, serve and top with additional pineapple if desired.
