PEPPERMINT FUDGE COOKIES

Peppermint Fudge Cookies are a perfect and delightful treat to make during the holiday season. These easy to make peppermint fudge brownie cookies are covered in a chocolate glaze and crushed peppermint pieces.

Ingredients

  • ¾ cup cocoa powder
  • ½ cup butter 1 stick
  • ¼ cup shortening
  • 2 cups sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 ½ cups flour
  • ¾ tsp salt
  • 1 cup chocolate chips

Chocolate Glaze

  • ½ cup semi-sweet chocolate chips
  • cup heavy cream
  • ½ Tbsp butter
  • candy canes smashed, for topping

Alternate Vanilla Glaze

  • 2 tbsp butter melted
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • candy canes smashed, for topping

Instructions

  • Prep: Start by preheating the oven to325°F. Then, line a baking sheet with parchment paper or a silicon baking mat. Set aside.
  • Cookie dough: In a medium size bowl, microwave the cocoa powder, butter, and shortening for 1 1/2 - 2 minutes. Then whisk the mixture until the cocoa powder dissolves. Next, stir in the sugar until well-blended. After that, add in the eggs and vanilla extract, stir until combined. Proceed to add the flour and salt, mix well and then fold in the chocolate chips. Drop the dough by tablespoons onto the prepared baking sheet.
  • Bake: Place the cookies in the preheated oven and bake for 12-14 minutes. The tops of the cookies should crack just slightly. Allow to cool for about 2-3 minutes before removing from pan and let them cool before topping with the glaze.
  • Easy Chocolate Glaze: In a microwave safe bowl, heat the heavy cream and butter in the microwave for 2 minutes. Then add in the chocolate chips and microwave for 30 additional seconds. Let mixture sit for 1 minute, then whisk gently until smooth. Be sure to let chocolate glaze cool for about 5 minutes, then take each cookie and spoon the glaze on top. Sprinkle with peppermint pieces and let cool to set for about 5-10minutes.
  • Alternate option: Vanilla Glaze Topping: Whisk the melted butter, powder sugar, vanilla extract and milk together until smooth. Immediately spoon onto top of cookies and sprinkle with peppermint pieces. Let cookies cool to set. Serve cookies and enjoy!
