EASY CORN ON THE COB

Corn is a great side dish to any BBQ, holiday feast, or even Sunday dinner. With this easy corn on the cob recipe, you'll always have a simple recipe you can use to impress and feed your guests.

Ingredients

  • 4 ears of corn (husks on)
  • 2 TBSP melted butter
  • 1/4 tsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp Parmesan cheese
  • 1/8 tsp black pepper

Instructions

  • Wash the outside of the corn husks, just to get any obvious dirt off. Place 2 of the ears of corn on a plate (husks and all!) and microwave according to the info below. (I found it was easier to do mine in sets of 2, although I could fit 3 in my microwave.)
  • Microwave 1 ear of corn for 3-5 minutes
  • Microwave 2 ears of corn for 5-8 minutes
  • Microwave 3 ears of corn for 7-10 minutes
  • After corn is cooked, let sit for another 2-3 minutes in microwave. Cut the stalk side and squeeze opposite end of the corn, until corn falls out of the husk.
  • Combine butter and remaining ingredients. Brush over corn and serve!
  • Tips: When the microwave is done, corn should feel really hot. The spans of time differ just because some ears of corn are skinnier/ fatter than others. If corn doens't feel really hot, put it back in for another minute or so. Also, if your corn doesn't slip easily out of the husk after cutting the stalk, it's either not cooked enough (put it in for another minute) or you didn't cut enough of the stalk off.
