Strawberry Lemonade Pina Coladas are an easy, non-alcoholic fruity drink that tastes incredible. This virgin strawberry pina colada is so simple to make, prep the fruit, blend it all up, assemble and serve!
3tbsplemon juicejuice and lemon requires 2 lemons, total
½cupsugardivided
4cupsfresh pineapple
1 13.5-ozcan Coconut milk
1tspvanilla extract
3cupsice cubes
Instructions
Prep: Begin by washing the strawberries, removing the stems. Also, cut up the pineapple (if you are using a fresh one)and set aside the required measurement of pineapple chunks. After that, zest the lemon for the needed amount and set it aside. Then, juice the lemons and measure out the amount of juice needed for this drink.
Blend: Next, combine the clean strawberries, lemon zest and lemon juice, as well as a 1/4 cup of sugar in the blender. Proceed to blend until smooth. Transfer this mixture into a separate container and set aside. Rinse out blender for the next mixture. Then, combine the pineapple chunks, coconut milk, vanilla extract, the remaining 1/4 cup of sugar and ice cubes in the blender. Continue to blend these ingredients until smooth.
Assemble: Starting with the pineapple mixture, fill each glass about a 1/4 of the way full, then add a couple spoonful's of the strawberry mixture on top, add more pineapple mixture, them more of the strawberry mixture, repeat until you have filled the glasses to the desired amount. Finish with a dollop of strawberry mixture on the top, garnish with diced strawberries, pineapple, or lemon slices. Serve immediately and enjoy these tasty drinks!
Tip: If you want a thicker, more smoothie-like consistency, then cut the pineapple and freeze it for several hours prior to making pina coladas. Then omit the ice when blending. Yields about 6 mocktails, depending on size of the glass.
