SLOW COOKER GREEK POT ROAST

Slow Cooker Greek Pot Roast is a straightforward and delicious meal that comes together quickly and makes a full and satisfying meal. This pulled beef recipe involves seasoning a beef roast with a blend of Greek spices, including oregano, dill, nutmeg, and garlic.

Ingredients

  • 1 2-3 lb chuck roast
  • 2 cups beef broth
  • ¾ cup red cooking wine
  • 1 medium onion diced
  • 2 TBSP Greek seasoning
  • salt & pepper to taste

Instructions

  • Prep: Place the roast in slow cooker and proceed to pour the beef broth and red cooking wine into it as well. Dice the onion into small bits and transfer those to the crockpot as well.
  • Pour 1 TBSP of the Greek seasoning into the liquid in the crockpot and stir to incorporate. Sprinkle the other 1 TBSP of seasoning onto the top of the roast. Sprinkle the roast with a little salt & pepper.
  • Cook: Place the lid on the slow cooker and cook on low for 8 hours. At the 8-hour mark, increase the temperature to high and cook for another 2 hours. You can also cook the roast on high for 6-7 hours. Or, if you have time, cook it on LOW for about 13 hours and it is simply heavenly!
  • When cooking is complete, shred the roast using two forks, stir the meat in the juices and serve over rice or alongside potatoes and vegetables. Enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place the pot roast and any juices in a microwave-safe dish and heat on high for 1-2 minutes, or until heated through.
