Prep: Start by spraying a 9 x 13 dish with non-stick cooking spray, set aside. Then, in a large bowl, measure out the 6 cups of Rice Krispies and set aside for later use.
Cook & Assemble: Next, in a small saucepan, combine the sugar and corn syrup. Then bring this mixture to a boil over medium heat. Once the mixture begins boiling, remove from the heat immediately and then add in peanut butter. Stir the mixture to combine well.
Proceed to pour the mixture over the Rice Krispies in the large bowl. Then, using a rubber scraper, stir until the cereal is well coated. The mixture should be soft and easily stirred. Don't worry about working quickly, at this point you are trying to cool the mixture down a bit. I stirred mine for about 3-4 minutes.
After that, add in the marshmallows and stir a few times. Just before you are ready to transfer the mixture to the pan, stir in half the mini chocolate chips. Now is when you need to work quickly because these little guys melt fast!
Cool: Next, pour the coated cereal into the prepared dish that has been sprayed with cooking spray. Then sprinkle the remaining mini chocolate chips on top and use either the back of a rubber scraper or a plastic baggie over your hand, gently press the mixture into the pan. Work quickly so that the chocolate stays on the treats rather than melting on your hand or the scraper.
Be sure to allow the krispie treats to cool for 1-2 hours, when they have set, cut into 2" squares. Serve and enjoy!
