BERRY JELLO PARFAITS

Berry Jello Parfaits are a delicious and refreshing dessert, with only four ingredients, they are incredibly simple to make. Fresh berries are packed with antioxidants and other nutrients, while the whipped cream in these Jello fruit cups add just the right amount of sweetness

Ingredients

  • 1 ½ cups boiling water
  • 3 oz package of flavored Jell-O gelatin Raspberry/ Strawberry/ Blackberry
  • 1 cup berries heaping cup
  • 8 oz tub of whipped topping thawed, divided

Instructions

  • Prep: Wash your berries well, remove any stems, and if you are using a large berry like a strawberry, cut it into quarters. For raspberries, blueberries and blackberries you can keep them whole.
  • In small clear cups, pour some of each fresh berry in the bottom to fill it about a ¼ of the cup. Set aside.
  • Jello: In a large bowl with a pouring spout or a large 4-cup measuring cup, combine the boiling water and the gelatin mix. Heat the water in the microwave until boiling, or you can do this on the stove top in a saucepan. Whisk until the Jello has dissolved.
  • Add in ½ of the 8-ounce tub of whipped topping into the Jello mixture and whisk until blended. Pour the Jello liquid into the 6 bowls/cups on top of the fresh berries.
  • Chill: Place the cups or bowls in the refrigerator for about 2 hours or until firm.
  • When fully chilled, top each cup with a large dollop of the remaining whipped topping and additional berries. Serve and enjoy!

Notes

Berry Jello Parfaits can be stored in the refrigerator for up to 2 days. To keep the parfait fresh, it's recommended to store it in an airtight container.
