PINEAPPLE SALSA

Pineapple Salsa made with fresh pineapple, tomatoes, red onion and bell peppers. This easy salsa recipe is fresh, flavorful and absolutely perfect for a weekend BBQ or weeknight meal.

Ingredients

  • 1 ¾ cup pineapple diced
  • ¾ cup tomato diced
  • ¼ cup red onion diced
  • ¾ cup orange bell pepper diced
  • cup cilantro chopped
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 5 tsp lime juice
  • 3 teaspoons serrano chili pepper stemmed, seeded and finely chopped (use a jalapeño pepper if you want it milder)

Instructions

  • Dice the pineapple in small pieces until you have the required amount (1 3/4 cup). Go ahead and save the rest of the pineapple for another recipe, or save it to eat later!
  • In a small bowl, mix together diced pineapple, tomatoes, chili, red onion, pepper, salt, pepper, lime juice, and cilantro. Stir until well combined.
  • Store in the refrigerator until ready to serve. Serve chilled or at room temperature. I actually prefer to make the salsa a day ahead of when I'll be serving it so that the flavors have time to meld, but you can eat the salsa immediately after making it too!
