HIGH PROTEIN DOUBLE BERRY MUFFINS

High Protein Double Berry Muffins are moist, sweet, full of blueberries and raspberries and also packed with protein. Each high protein muffin has 12 grams of protein!

Ingredients

  • ½ cup butter
  • 1 cup brown sugar
  • ¼ cup applesauce
  • 3 scoops vanilla protein powder
  • 4 egg whites
  • 2 cups vanilla Greek yogurt
  • 2 cups Kodiak buttermilk pancake/waffle mix
  • 2 cups oats old-fashioned or quick, or a combination of the two
  • 1 cup raspberries
  • 1 cup blueberries

Instructions

  • Preheat oven to 375°. Prepare 2 muffin tins by filling them with paper muffin liners or spray the pans with non-stick cooking spray.
  • Melt butter and mix together with the brown sugar and protein powder. Add the applesauce and stir in.
  • In a separate bowl, use a hand mixer to beat the egg whites until stiff. This should take about 3-4 minutes. Fold in the yogurt and gently mix just until combined.
  • Add the butter/brown sugar mixture and use a spoon to mix just until combined.
  • Fold in the Kodiak mix and the oats and mix just until combined.
  • Gently fold in the berries. Scoop batter into the prepared muffin tins. I like to use a muffin scoop (large cookie scoop) to evenly portion the batter, but you can use a spoon to fill the muffin pans. Each muffin cup should be about 2/3 full.
  • Bake for 25 minutes or until a toothpick inserted in the middle comes out clean. Let cool in the pan for about 5 minutes and then transfer the muffins to wire racks to cool completely.
