Ingredients

  • 2 cups quick oats
  • ¾ cup peanut butter
  • 5 TBSP maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 TBSP coconut oil melted

Toppings

  • 14 TBSP Greek Yogurt or yogurt of your choice
  • 1 ½ cups Fresh Berries Raspberries, diced strawberries, blueberries, etc.
  • ½ cup Diced Fresh Fruit mango, kiwi, banana
  • ¼ cup chocolate chips optional

Instructions

  • Prep: Heat the oven to 350°F.
  • Oatmeal cups: In a medium bowl add the oats, peanut butter, cinnamon, maple syrup, and vanilla extract. Stir these ingredients until completely combined.
  • Next, melt the coconut oil in the microwave for 30 seconds and then use it to grease your muffin pan. You can also use muffin liners to make it easier to remove them from the tin. Then spoon 2 heaping tablespoons of the oat mixture into each well of the muffin tin. Use the spoon to create a cup or nest and press down until firm.
  • Bake: Place the muffin tin in the oven and bake for 15-18 minutes. The oatmeal cups should be lightly golden brown when finished. Remove the muffin tin from the oven and let them cool for a couple of minutes before removing them from the tin. Set your cups on a cooling tray and let them cool until room temperature.
  • Assemble: Grab your yogurt and add a couple of tablespoons onto each cup. Then garnish the oatmeal cups with the fruit and toppings. Serve and enjoy!
