Ingredients

  • 2 cups Roma tomatoes diced (about 3-4 tomatoes)
  • ¼ cup yellow onion diced
  • ¼ cup fresh cilantro chopped
  • 2 TBSP jalapeño pepper (with seeds removed) finely diced (optional)
  • 4 oz chopped green chiles drained
  • 2.25 oz sliced black olives drained
  • 1 TSP salt
  • 1 packet Italian dressing mix I use Good Seasons
  • ½ TSP cumin
  • 2 TBSP water
  • 2 TBSP olive oil
  • 2 TBSP white vinegar
  • 1 TBSP lemon juice Juice of ½ lemon

Instructions

  • Prep: Get started by preparing the ingredients. First, dice the tomatoes into small cubes. Also, dice the onions and cilantro into small chunks.
  • If you are choosing to include a jalapeno pepper, remove the seeds and finely chop that into very small pieces. Then, drain the cans of green chilies and black olives.
  • Assemble: Next, in a large bowl, mix together the tomatoes, onion, cilantro, jalapeño pepper, green chiles, black olives, and salt. In a separate bowl, whisk together the Italian dressing mix, water, olive oil, and white vinegar. Proceed to pour this mixture over the bowl of vegetables and stir to combine well. After that, squeeze in the lemon juice and stir.
  • Continue to cover the bowl and place in the refrigerator to chill for at least 30 minutes before serving. Serve with tortilla or pita chips and enjoy
