Oatmeal Cookie Brownie Bars made completely from scratch with three different layers. There is an oatmeal crust, a brownie layer and a simple chocolate frosting on top!

Ingredients

OATMEAL COOKIE CRUST:

  • cup flour
  • ½ tsp baking soda
  • 1 cup brown sugar
  • 2 cups quick oats
  • cup butter melted

BROWNIE LAYER:

  • ½ cup butter softened
  • 1 ½ cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 ½ cups flour
  • ¼ tsp salt
  • ¼ tsp baking soda
  • 4 Tbsp cocoa

CHOCOLATE FROSTING:

  • ½ cup semi-sweet chocolate chips
  • 4 Tbsp milk
  • 4 Tbsp butter
  • 2 cups powdered sugar
  • 1 tsp vanilla

Instructions

  • Preheat oven to 350°.
  • To make the oatmeal cookie layer, mix the flour, baking soda, brown sugar and oats together in a large bowl. Pour the melted butter over the mixture and mix until well combined.
  • Press into a greased 9X13 pan.
  • For the brownie layer, cream butter, sugar, eggs and vanilla together for 2-3 minutes in a large bowl.
  • In a separate bowl, combine the flour, salt, baking soda, and cocoa powder. Add to the creamed mixture and mix just until combined. Pour the brownie batter over the oatmeal crust.
  • Bake for 30-35 minutes or until toothpick inserted in the middle comes out clean. Cool and then make the frosting.

To make the frosting:

  • In a microwaveable bowl, melt chocolate chips, milk and butter. Microwave in 30 second intervals, stirring between each interval until completely melted and smooth.
  • Add the powdered sugar and vanilla and mix until smooth. Spread over the cooled brownies.
