Ingredients

  • 1 ½ cups Flour
  • 1 tsp Each baking powder and baking soda
  • ½ tsp Salt
  • 3 Bananas mashed
  • ½ cup Brown sugar
  • 2 Eggs
  • cup Canola oil
  • 2 tsp Vanilla extract

Crumb Topping

  • cup Brown sugar
  • 2 tbsp Flour
  • ½ tsp Cinnamon
  • 1 tbsp Butter cold

Instructions

  • Prep: Start by preheating the oven to 375 degrees F. Then, line a muffin pan with paper or silicon cups and set aside.
  • Batter: In a small bowl combine the dry ingredients, the flour, baking powder, baking soda, and salt. Lightly mix with a whisk.
  • In a separate large bowl, mash the bananas with a fork. Then, add in eggs and oil and whisk lightly. Next, add the brown sugar and vanilla extract. Whisk just until all the ingredients are combined.
  • After that, combine the dry ingredients to large bowl with the wet ingredients. Set the whisk aside and use a rubber scraper to mix the batter enough so that everything is combined. Proceed to ladle out into the prepared muffin cups, filling each about ⅔ full.
  • Crumb topping: In a separate bowl, combine the brown sugar, flour, cinnamon and butter, for the crumb topping. Using a fork, smash the butter and combine with the other ingredients. Repeat this for a good 2 minutes or so, until the butter is incorporated into everything else. Then mixture will resemble wet sand, spoon about 1 tablespoon of it onto the batter in each muffin cup.
  • Bake: Place the muffin pan into the preheated oven and bake for 20 minutes, or when muffins turn golden. Cool and serve with butter of course.
