Chicken Tortilla Soup

Chicken Tortilla Soup is a delicious and filling meal that your whole family with love! This tortilla soup with black beans is easy to make, using canned goods from your pantry you can create a wonderful meal.

Ingredients

  • 3-4 tbsp Dried onion If you want to, you can use half of a medium onion instead.
  • 3 14.5-ounce cans cream of chicken soup
  • 3 14.5 ounce cans chicken broth
  • 1 cup Salsa
  • 1 tsp Chili powder
  • 2 2 cans of shredded chicken You could also use 2-3 cooked shredded chicken breasts or a rotisserie chicken.
  • 1 14.5-ounce can of black beans rinsed and drained.
  • 1 14.5-ounce can of sweet corn drained.

Instructions

Crockpot method

  • In a large saucepan, sauté the dried (or fresh) onion in a 1/4 cup of the chicken broth for about 3-4 minutes on medium heat.
  • Then, add in the rest of the chicken broth and all of the cream of chicken soup. Mix well and heat to the point of boiling.
  • At this point, transfer the mixture into a crockpot and add in the salsa, chili powder, shredded chicken, black beans and corn.
  • Proceed to cook on low heat for about 3-4 hours.

Stovetop method

  • If you would like to continue to cook the soup on the stove top, just add in the remaining ingredients, the salsa, chili powder, shredded chicken, black beans and corn.
  • Simmer on low heat for 20-30 minutes, make sure all the ingredients are well heated.

Serve

  • When you are ready to serve, top each bowl of soup with tasty additional toppings like, shredded cheese, sour cream, tortilla strips, avocado, tomatoes and/or anything else that sounds good!
