Grilled Foil Pack Potatoes are made with a flavorful blend of onions & spices, a simple and delicious side dish that can be prepared in just a few minutes! These foil baked potatoes on the grill are perfect for summer barbeques or any time you want to add some variety to your meal.
7-8cupsbaby potatoes washed and quartered(about 2 pounds)
¼cupolive oil
½TBSPdry parsley
½TBSPminced onion
½tspsalt
1tspgarlic powder
1tspcelery seeds
¼tspground pepper
¼tspground thyme
Instructions
Prep: Prepare your BBQ for direct heating. Heat your BBQ to 400 degrees F.
Prepare Potatoes: Wash and chop the potatoes into bite sized pieces. Depending on the potato you are using, you can quarter them or dice into cubes.
In a large bowl, put the washed and cut potatoes. Pour the olive oil and mix to coat all potatoes.
Add dry parsley and minced onion. Add the salt, garlic powder, celery seeds, ground pepper, and thyme. Sprinkle evenly over the potatoes. Carefully mix so all potatoes are coated with the seasonings. Set aside.
Assemble packets: Cut 4 pieces of heavy duty aluminum, about 10 inches wide.
Then, add 1 ½-2 cups of the potatoes into each sheet of foil.
Fold the aluminum foil to form a pocket and close it up. Repeat until you have the 4 foil packets full of potatoes.
Cook: Place on the grill of preheated BBQ. Cook for 20 minutes with the cover closed. Check if the potatoes are nice and tender when inserting a fork. Continue cooking, checking every 5-10 minutes, until desired consistency is achieved. Aim for around 30-40 minutes total cooking time. (Keep in mind the time will vary with the size and kind of potatoes you are using.)
Remove foil packets from the grill and let cool 5 minutes. Carefully open packets as steam is HOT! Serve warm & enjoy!
Notes
Foil pack potatoes can be stored in the refrigerator for up to 3 days. To reheat, wrap the potatoes in foil and place them in the oven for 10-15 minutes at 350°F.
