Ingredients

  • 24 oz baby potatoes equal to about 3 cups
  • 1 tsp season salt
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • tsp pepper
  • 1 tsp olive oil
  • ¼ cup butter

Instructions

  • Prep: Start by preheating your 10 inch cast iron skillet in the oven at 400 degrees F for 5-10 minutes or on the stovetop over medium heat for the same amount of time.
  • While the skillet is heating up, rinse and cut your potatoes into 4 pieces each and place them into a gallon-sized ziplocked bag.
  • Season: Next, in a small bowl combine the salt, pepper, onion powder and paprika. Stir to mix well. Then, pour the seasoning mixture into the baggie with the potatoes and seal the bag shut. Shake the bag well to combine and coat the potatoes.
  • Cook: Drizzle the olive oil in the cast iron skillet and wait one minute for it to sizzle and coat the bottom of the pan well. Proceed to dump the potatoes from the bag into the skillet.
  • Then, drop the 2 tablespoons of cubed butter on top of the potatoes. As the butter melts, stir it into the potatoes to mix together.
  • Let the potatoes cook for 15 minutes, stirring every 5 minutes or so. You want them to get crispy on all sides, so try not to stir too often.
  • After that, add the remaining butter and stir again as it melts. Continue to cook for another 15 minutes before removing from heat. You can use a fork to check the potatoes are cooked through, you want them nice and tender.
  • Let cool until safe to handle before serving. Serve immediately and enjoy!

Notes

Cast iron skillet potatoes can be stored in an airtight container in the refrigerator for up to 4 days. However, they are best when consumed immediately after cooking.
