Ingredients

  • 1 cup Peanut butter
  • 1 cup Brown sugar
  • 1 Egg
  • 1 tsp Baking soda
  • 2 tbsp Sugar (optional) for the cookie topping

Instructions

Prep

  • Start by preheating the oven to 350 degrees F.
  • Then, line a baking sheet with parchment paper, a silicon mat or spraying with non-stick cooking spray. Set aside.

Cookie dough

  • In a large bowl, combine the peanut butter, brown sugar, egg and baking soda, stir well to combine. If you have an electric hand held mixer that would be great to use, it makes the dough light and fluffy and creates amazing cookies.
  • Next, drop rounded teaspoons of cookie dough onto the prepared baking sheet.
  • After that, using a fork, press gently into the top of each cookie to create a crisscross patter.
  • If desired, add a small amount of sugar to the fork before pressing into the cookie. I get the fork wet under the faucet and dip into the sugar, then press onto the cookie.

Bake

  • Proceed to put the cookies into the preheated oven and bake for 7-9 minutes. The cookies should be puffed up and slightly cracked on top to signal they are done.
  • Remove from the oven and let the cookies cool on the baking sheet for an additional 5 minutes. Transfer to a cooling rack and let cool completely.
  • Serve immediately and enjoy!
