Ingredients

  • ½ cup Butterscotch chips
  • ½ cup Peanut butter
  • ¼ cup Butter
  • ½ cup salted Spanish peanuts or salted peanuts
  • 1 ½ cups Mini Marshmallows
  • ¼ cup mini chocolate chips optional, for topping

Instructions

  • Cover an 8-inch square baking dish with parchment paper, set aside. Make sure this dish fits in your refrigerator well, that is where it will be going to chill.
  • In a small saucepan, over low heat, combine and melt the butterscotch chips, peanut butter and butter. Stir constantly for 3-5 minutes until the mixture is completely melted and smooth.
  • Remove from the heat and let cool for about 5 minutes. You don't want the mixture too hot or the marshmallows to melt when they are added.
  • Next, stir in the peanuts and marshmallows. Stir to fully combine and coat all the peanuts and marshmallows.
  • Chilling time: Pour the mixture into the prepared baking dish with parchment paper. Top with mini chocolate chips if desired. Then, cover with foil or plastic wrap and refrigerate for 30 minutes or until set. When ready to serve, cut into bars and enjoy!

Notes

Bars store well in an airtight container in the fridge for up to a week. Can be frozen for up to 1 month.
