BAKED S'MORES BARS

Baked S'mores Bars are made with a buttery graham cracker crust, chocolate chunks, and a layer of gooey marshmallow fluff. This smores bar recipe combines all the flavors of this classic treat into a delightful cookie bar that is easy to make and perfect for sharing with friends and family.

Ingredients

  • ½ cup butter softened to room temperature
  • ¼ cup brown sugar
  • ½ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ⅓ cups flour
  • ¼ tsp salt
  • ¾ cup graham cracker crumbs (5-5 ½ full graham cracker)
  • 1 tsp baking powder
  • 4-5 Hershey chocolate bars
  • 1 ½ cups marshmallow creme (7 oz container)

Instructions

  • Prep: Preheat the oven to 350° F and then grease an 8X8 or 9X9pan. Set it aside.
  • Prepare the graham cracker crumbs by placing 5-6 full crackers in a ziplocked bag and use a rolling pin to crush them. Or you can use a blender or food processor for this step as well, whatever you prefer.
  • Crust dough: In a large bowl, cream the butter and both sugars together using an electric mixer. Add in the egg and vanilla extract, mix to combine.
  • In a separate bowl, whisk the flour, graham cracker crumbs, baking powder and salt. Add the dry mixture to the butter mixture, mix at a low speed until well combined.
  • Assemble: Divide the dough in half and press half of it into the bottom of your prepared pan. Place the chocolate bars evenly over the top of the dough, continue to spread the marshmallow fluff evenly over the chocolate layer.
  • The easiest way that I've found to make the top layer is to place the second half of the dough in a large ziplocked bag and roll it out until it is about the size of your pan. Use scissors to cut both long sides of the bag and pull up the top layer. Place the bag, dough side down on top of the marshmallow fluff and then peel the bag up.  
  • Bake: Place the pan in the preheated oven and bake for about 30-35 minutes. 
  • If you want to cut this into nice, neat looking bars, wait until it has cooled to cut. In our house, we prefer this warm, so we eat it straight out of the oven in not-so-pretty spoonful's! However you choose to serve it, enjoy!

Notes

These Smore bars will stay fresh for up to 5 days if stored in an airtight container at room temperature.
For longer storage, place them in an airtight container or freezer bag and freeze for up to 3 months. Thaw at room temperature before serving.
