Ingredients

  • 1 tbsp Olive oil
  • 2 cloves Garlic minced
  • 1 ½ tsp Chili powder
  • 14.5 oz diced tomatoes
  • 14.5 oz black beans rinsed and drained
  • 14.5 oz chicken broth
  • 1 cup Water
  • 14.5 oz sweet corn drained
  • 1 tbsp Lime juice
  • 1 cup cooked shredded chicken optional
  • 2 cups Tortilla chips slightly crushed
  • Additional toppings: crushed tortilla chips, shredded cheese, or sour cream

Instructions

  • In a large sauce pan or pot, heat the olive oil over medium heat.
  • Add in the minced garlic and chili powder, cook for about 1 minute.
  • Next, add in the diced tomatoes (with the juice), black beans (rinsed and drained), chicken brown, sweet corn (drained) and 1 cup of water.
  • If you are adding in the cooked shredded chicken, add it in now. You can either use a rotisserie chicken to make it super simple or you can make the chicken in the crockpot ahead of time.
  • Bring this mixture to a boil, then reduce the heat to simmer for 1/2-1 hour.
  • Then, add in the tortilla chips (slightly crushed, you want to break them in half at least). Cook for about 2 minutes until the chips have softened.
  • Remove from the heat completely and add in the lime juice, stir to combine. Season with salt and pepper if desired.
  • Serve in individual bowls, add additional toppings to each bowl if desired and enjoy!
